One of my favorite flavor combinations in the summer is tomatoes with fresh basil and balsamic vinegar. This recipe makes that combo interesting by adding peaches to the mix. It’s another one from Tosca Reno’s new book – The Eat-Clean Diet Cookbook 2 – thanks for sharing!
This salad is best during summer when peaches and heirloom tomatoes are in season and at their peak. Heirloom tomatoes can be found at farmers’ markets and in some finer grocery stores. If you can’t find heirloom tomatoes, flavorful vine-ripened tomatoes are a good substitute, and can be found at most grocery stores year round.
